Whether it's because of one too many margaritas or not enough fresh greens, an indulgent weekend, relaxing vacation, or hectic week can often leave you feeling bloated and lethargic. It's not unusual to think you have to do something drastic to get back on track, but that doesn't have to be the case. It's amazing how much a big bowl of greens can help - especially this salad from chef and cookbook author Candice Kumai. Instead of detoxing - and in many cases, depriving the body of food - Candice suggests using healthy, whole foods to undo damage from a period of indulgence. This helps to retrain taste buds while also giving the body a fresh start, she says.

Candice's recipe for a watercress salad will become your go-to for those times that you're feeling like you need a reset. Full of nutrient-rich ingredients known for having detoxing properties, the tahini dressing gives the dish savory Asian-inspired flavors you'll want to put on everything.

Radish & Watercress Detox Salad and Almond Tahini Dressing

Ingredients

For the almond tahini dressing:
3 tablespoons tahini paste
3 tablespoons unsweetened almond milk
1 1/2 teaspoons lemon juice
1 1/2 teaspoons soy sauce
For the salad:
1 cup cooked and cooled farro (prepare per package instructions)
1 bunch fresh watercress, ends removed
1/3 cup cooked edamame or peas
1 bunch radish
1/4 cup sliced almonds

Directions

  1. In a large mixing bowl, whisk together all ingredients for the dressing until well combined. In the same bowl, add in the cooked farro, watercress, and peas or the edamame.
  2. With a mandoline or sharp knife, thinly slice the radish. Add to the large bowl with the ingredients. Using salad tongs, mix until evenly dressed. Garnish salads with sliced almonds and serve.
