18 Breakfast Recipes (That Make Great Dinners, Too)

I love breakfast food—fluffy pancakes, runny eggs, crispy potatoes, all of it—but I'm not what you'd call a "morning person." When I do make myself a nice breakfast, it's never during proper breakfast time, and I'm okay with that. In fact, it's time we all throw out our hang-ups about when we should eat what and start just eating what we want when we want it, if you follow me. (I mean, within reason—I'm not giving you permission to eat chocolate milkshakes all day. Only you can give yourself that permission.) In honor of this call for freedom, we've gathered a list of mouthwatering breakfast dishes that also make totally great dinners—brinners, if you will.

Fully Loaded Mexican Fried Chicken With Green Chili–Corn Waffles

Classic chicken and waffles is a dish dear to many hearts, but open your mind to this fully loaded Mexican version, and you'll be richly rewarded. Using waffles infused with corn and roasted green chilies, crispy chicken that's been soaked in lime and hot sauce before frying, and a topping of guacamole, salsa roja, crema, and honey-ancho bacon, this is a flavor bomb of a meal that's just as mind-blowing in the evening as it is by day.
